Recipes from Chef Julie Yoon

I came across Chef Julie Yoon's blog as I was looking for Korean cake recipes.  (I'll talk more about that in another blog.  I am a bit obsessed.)  Julie is Korean but makes a variety of dishes that look so delicious.  Here are a few of my Must Try recipes that I found from her blog.

Comfort Food At It's Finest

Mediterranean Macaroni and Cheese by Cooking Classy.  I cannot wait to try this recipe with my family!

Speaking of comfort food, you all may have seen the lasagna roll ups going around the web.  I have been debating on when to make it.  Lasagna Rolls seem to be the perfect portion size.  I especially want to try The Girl Who Ate Everything's version of her Healthy Spinach Lasagna Rolls.



Today, I came across this recipe from Cooking Classy.  I was stunned.  Why haven't I thought of this after seeing the regular lasagna recipes?  My kids LOVE alfredo sauce and anything creamy.  They call it "the white sauce".  So when I saw this image... I immediately thought of them.  I bet they would love this.  Creamy White Chicken Lasagna Roll Ups by Cooking Classy.  I can't wait to try all of these recipes!  This is comfort food at a new level!

Fish Tacos

Alas, I have returned!  After a fun-filled holiday season with the family and a horrific virus passing through my family, I have made it out safe and sound.  I have to admit it's been a rocky start to the new year with the chaos around the family being sick... but we must press on.

So for 2013, my husband asked me to start cooking healthier meals.  This is fine for me.  Then, he asks me to give up steak for a year.  STEAK?  No can do.  I love my medium well steak with A1 sauce.  I can't do it.  I know I will give in!  8 years ago if you asked me to give up steak, I could have done it.  That was before I married my husband.  But after eating a variety of steak through the years and being taught how to cook it just right so it's moist and melts in my mouth... I can't do it.  Look, I try not to make promises I can't keep.  So I will say this.  I will attempt to cook healthier.  For my family's sake.  (As I am writing this, I am remembering the HUGE slap of pork ribs currently in our freezer). This will have to become a lifestyle.  Yes indeed.  So to top off today's story, I will leave you with a healthy recipe.

I have tried a few recipes from Jo Cooks.  Okay.  I have tried 2 recipes from Jo Cooks.  First:  The amazing Fish Tacos (recipe below).  Second:  Bang Bang Chicken.  Let me be clear about this.  Jo Cooks never steers you wrong.  I am already eying some of her other recipes to try.

My family and I tried this recipe over the holidays.  Let me tell you something.  I have NEVER tried fish tacos before.  I don't even incorporate a lot of fish in my diet.  One.  I don't like the slimy texture of the skin.  Two... I don't like the smell.  If it's too strong of a smell, I'm outta there.  But this.... this was light and delicate.  The fish melted in my mouth.  I used tilapia instead of marlin steaks.  And instead of grilling the fish in the freezing winter at the cabin, we went ahead and pan seared them.  It still tasted delicious.  I adjusted the ingredients to what I had on hand.  You know what?  It was still amazing.  So here you go.  New recipe for you.  It is definitely a keeper for me.

Fish Tacos from Jo Cooks

Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes

Ingredients:
    Sauce
  • 1 cup sour cream
  • 1/2 tsp red chili powder
  • 1/2 tsp cumin
  • 1 tsp capers
  • juice from 1 lime
  • 1 tsp dried dill
  • 1/2 tsp oregano
  • Tacos
  • 2 marlin steaks
  • salt and pepper to taste
  • 1 tbsp lemon juice
  • 6 medium whole wheat tortillas
  • 1 cup shredded cabbage
  • 1 cup cherry tomatoes, halved
  • 3 green onions, sliced
  • 1/4 cup cilantro, chopped
Instructions:
  1. Season the marlin steaks with salt, pepper, and lemon juice, and grill the marlin steaks to your liking.
  2. Prepare the sauce, mix all the sauce ingredients together and refrigerate until ready for use.
  3. Assemble the tacos. Using a fork, shred the fish, so that it’s flaky. In each tortilla place the fish, cabbage, tomatoes, green onions, sauce and garnish with cilantro.
